Brinjal chana dal/ వంకాయ శనగపప్పు

Some cooking combinations are evergreen. One of such recipe is this from my weekly menu. Mixing veggies & dal increases its nutritional value & helps in better assimilation. There are so many combinations I cook with brinjal, but this is one of my favourite combo. Let’s hop in to the recipe & ingredients needed.

Ingredients:

Brinjal- 250 gms ( long & tender ones)

Chana dal/ Bengal gram dal- 1 tbsp

Salt to taste

Turmeric powder pinch

Ginger garlic paste- 1/4 tsp

Onions chopped- 1

Green chilli chopped-1

Oil – 2 tablespoon

Seasoning:

Mustard seeds- 1/2 tsp

Cumin seeds- 1/2 tsp

Curry leaves- 2 twigs

Red chillies- 1 or 2

Procedure:

1. Wash & soak gram dal/ chana dal for half an hour minimum.

2. Wash & cut brinjal in to long pieces. Immerse them salt water until you cook to avoid turning into black.

3. Heat a 2 tbsp oil in a pan. Add seasoning ingredients.Add chopped onions & green chilli. Sauté until transparent.

4. Add ginger garlic paste. Fry well. Add turmeric & salt.

5. Add chopped brinjal pieces ( rinse with plain water before you add). Stir well. Cook with lid for 2 minutes.

6. Remove lid& add red chilli powder & soaked chana dal. Add 1/4 cup water. Cook 2 more minutes with lid.

7. Turn off flame & transfer to a serving bowl.

8. Serve with hot rice.
