Dosakaya tomato pachadi/ yellow cucumber tomato chutney

A traditional chutney made with fresh yellow cucumbers & tomato. Goes well with rice and ghee. Pachadi made in mortal& pestle tastes heavenly. However you can prepare in mixer grinder too. Healthy way of consuming chutney instantly. Stays fresh up to days in refrigerator. most south Indian families are aware of this Chitnis made with veggies. You can make interesting recipes with little variations.

Ingredients:

Yellow cucumber/ Dosakaya- 1 small (chopped few big chunks, few finely chopped & seeds)

Seeds & finely chopped pieces should be mixed just before seasoning.

Tomato- 1( semi riped)

Green chilli- 5

Cumin seeds _ 1/2 tablespoon

Asafoetida- pinch

Tamarind paste- 1/2 tablespoon

Curry leaves few

Oil- 2 tablespoon

Garlic cloves- 5 to 6

Urad dal- 1/2 tsp

Chana dal – 1 tsp

Ground nuts 1 tbsp

Coriander- handful

Cooked cucumber & tomato, few cucumber raw chopped finely, cucumber seeds

seasoning :

Urad dal- 1/2 tsp

Mustard seeds-1/2 tsp

Red chilli- 2

Asafoetida pinch

Curry leaves few

Oil one tbsp

Procedure:

1. Heat tbsp oil in a pan. Add chopped cucumber , turmeric & tomato. cook till soft. Let it cool.

2. In a pan heat tbsp oil. Add chana dal,urad dal,green chilli & cumin seeds. Let it splutter. Add ground nuts. Fry well.

3. In a grinder grind green chilli, salt,ground nuts fried. Grind coarsely.Add cooked cucumber & tomato mixture. Grind coarsely.

4. Add garlic pods& tamarind paste.

5. Grind it. Add chopped coriander leaves& finely chopped raw cucumber pieces & seeds. It gives a nice crunch to the chutney.

Seasoning:

Heat tbsp oil in a saute pan. Add all seasoning ingredients.

Add seasoning to the chutney.

Serve with hot rice and ghee.
