A typical Andhra cuisine recipe am sharing today is GUMMADIKAYA PULUSU. This goes well with mudda pappu and annam ( Dal & rice). This is sour and sweet in taste. Sweetness of pumpkin and sourness of tamarind gives unique taste to this recipe. As we all know health benefits of pumpkin, so include in your diet on and off with little variations.
Ingredients:
Pumpkin – small piece (250 gms)
Tamarind lemon sized ball.
Oil 1 tbsp
Salt to taste
Onion chopped pieces 1
Green chillies 2
Seasoning:
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Garlic cloves 4 to 5 ( crushed)
Curry leaves few
Asafoetida..a pinch
Turmeric powder..1/4 tsp and Chilli powder – half tsp
Methi, cumin, coriander powder..1/4 tsp( dry fry and make powder in a mortar and pestle)
Procedure:
1. Wash and soak tamarind in warm water. After half an hour make juice out of it by adding one cup water.
2. Heat one tbsp oil in a kadai. Add mustard, Cumin seeds, crushed garlic cloves, when it splutter add green chillies and onion pieces and Curry leaves. Saute in low flame.
3. Add pumkin pieces and keep lid and cook for five minutes. Then add turmeric powder,salt and Chilli powder. Let it cook in medium flame.
4. When it is half cooked add tamarind juice. Cook in low flame with lid.
5. Now check salt. Add if needed.
6. Sprinkle cumin, methi, coriander powder and switch off. Garnish with coriander leaves and serve with hot rice and Dal.
