Ridge gourd peel chutney is a well known dish in Andhra region. We generally prepare ridge gourd Curry and chutney,but we discard the peels. Peels are rich in fibre and nutrients. This chutney is so delicious, you can have it with rice,dosa n idlis. So, next time when you prepare ridge gourd curry don’t discard the peels, try this yummmy recipe! Let’s have a look in to the recipe.
INGREDIENTS:
Ridge gourd- 1 cup ( peels)
Raw tamrind- 1/2 cup(tender)
Green chillies- 5 to 6
Red chillies- 2
Oil – 1 tbsp
Salt to taste
Garlic – 4 to 5
Turmeric- a pinch
Coriander leaves few
Tempering:
Garlic – 2 to 3 cloves
Mustard seeds- 1/2 tsp
Red chillies- 2
Oil – 1 tsp
Preparation time- 10 minutes
Cooking time- 10 minutes
Total time: 20 minutes
TIPS:
✓coarsely grind chutney
✓ salt and Chillies as per your taste
✓ if raw tamarind is not available use regular tamarind. Soak and add tamarind.
PROCEDURE:
1. In a pan heat 1 tbsp oil and add green chillies and cumin. Fry well
2. Now add ridge gourd peels cook for a 5 minutes. Then add tamrind, coriander and cook for a minute.
3. Switch off and let the mixture cool.
4. In a grinder grind chillies, cumin first. When it is crushed well add cooked vegetables and salt.
5. Grind well and finally add garlic and crush well. Let the chutney remain coarse.
6. TEMPERING:
In a pan heat 1 tsp oil and add mustard seeds, red chillies, curry leaves and asafoetida.
Mix this well with chutney.
Serve with hot rice and Ghee.
